Banana Bread

I got this recipe from Ballymaloe. I like it because it’s sugar free but not in an annoying look how healthy I am way. I’ve always thought of banana bread as more of a snack than a cake so I don’t see the point in adding sugar when you can get such a nice bread without it.

Ingredients

225g plain flour

2tsp baking powder

1/2 tsp salt

110g very soft butter

450g / 1 lb very ripe bananas, weighed out of skins

2 eggs

150g dark chocolate chips (optional)

150g chopped walnuts (optional)

Directions

Preheat oven to 180°C/350F.

Grease and line a 24 cm loaf tin.

Sieve the flour, baking powder and salt into a bowl. Rub the butter into it using your fingertips.

Mash the bananas in another bowl, then beat in the eggs.

Stir the wet into the dry, then fold in the walnuts and chocolate chips.

Bake for 1 1/2 hours, until a toothpick inserted into the centre comes out clean.

Cool completely before slicing.
