Chocolate Pear Pudding

A super simple, one bowl recipe. Nothing fancy. Perfect for those nights when you decide last minute you really can’t do without dessert.

I recommend adding some dark chocolate chips. When you eat it hot from the oven they ooze like little nuggets of chocolate sauce.

Ingredients

150g soft unsalted butter

125g caster sugar

2 eggs

125 g plain flour

25 g cocoa powder

1 tsp baking powder

1/4 tsp bicarbonate of soda

2 tsp vanilla extract

pears – either use tinned in juice or 2 poached pears

50g dark chocolate chips – optional but highly recommended

Directions

Preheat oven to 180°C. Grease a baking dish that’s approx 20cm sq.

Drain the pears, slice into quarters and arrange over the base of the dish.

In the bowl of a food processor cream the butter and sugar, then add the eggs and mix until incorporated, and finally all the dry ingredients. Stir in the dark chocolate chips at the end, if using.

Spread the batter over the pears and bake for 25 – 30 minutes.

Allow to stand for 5 minutes before serving. Lovely with crème fraîche, or toasted hazelnuts sprinkled on top.
