Maple Tahini Dressing

I love this dressing. Creamy, nutty, kinda sweet. It adds richness and oomph to anything it touches. In the pic I have poured it over grilled courgettes and broccoli, with crispy chickpeas.

A lighter and vegan friendly substitute for ranch / cream based dressings.

Ingredients

75ml tahini

juice 1 small lemon

25ml maple syrup

boiling water

salt

Directions

Mix the tahini, lemon juice and maple syrup together. Add boiling water, one spoonful at a time, until you reach the pouring consistency you want. I find 3 tbsp is usually enough. Season with salt.
