Banana Nut muffins

A yummy, vegan, breakfast or other time of day, kinda healthy treat.

Tip : If you want to make these but your bananas aren’t ripe enough you can bake them, whole, in their skins, in an oven until they turn black. I find 10 – 15 minutes at 180°C does the job.

Ingredients

3 very ripe bananas

1 apple

90g soft dark brown sugar

90g caster sugar

55m vegetable or sunflower oil

1 tsp vanilla

150g plain flour

50g oats

1 tsp cinnamon

1 tsp baking soda

1/2 tsp salt

125g crushed walnuts, plus extra for topping

50g unsweetened, desiccated coconut, plus extra for topping

Directions

Preheat oven to 180°C / 350 °F.

Mash the bananas with a fork and place in a large bowl. Grate the apple and add to the bananas, then stir in the oil, vanilla and sugars.

In a large bowl mix together the flour, oats, baking soda, cinnamon and salt.

Add the banana mix, walnuts and coconuts and stir gently to combine.

Scoop into muffin cups, 120g per portion. Sprinkle each muffin with walnuts and coconut.

Bake for 20 – 22 minutes until the tops are firm.

Allow to cool slightly before eating.
